Healthy Muffin in a Cup Recipe

This recipe is unbelievable easy!  Once I had all of my ingredients ready, it only took a minute or two to make!

I was super impressed with the breakfast muffin in a cup!  I’ve done this before with a “cake in a cup” but nothing healthy like this! Guess what?! There’s NO flour in it either. It does have Flaxseed and that acts like the flour! Love that!!!

All you do is mix the ingredients in a cup like this:

Pop it in the micorwave and watch it rise like this:

Voila! Hot and Healthy Breakfast Muffin!!!

I’ve tried this recipe the way it was originally written but I’ve also altered it too!  I found the first original recipe to be a bit dry and gritty for my taste so I perfected upon it to make it my own.  Here are both recipe versions!  You decide!

Original Breakfast in a cup recipe:

  • 1 tsp Coconut Oil (I always tend to find my best deals on Amazon when I need Coconut oil)
  • 2 tsp Cinnamon
  • 1/4 cup ground flaxseed (another one I tend to purchase on Amazon)
  • 1 tsp baking powder
  • 1 egg
  • 1 packet of Stevia (sugar substitute)

Mix ingredients well in a microwavable coffee mug and cook for about 50 seconds (it may take a bit longer for some microwaves). Allow to cool and flip over onto a plate. Voila! Heathly breakfast Muffin!

Here is Tim Ferriss’s Kindle Edition book, The 4-Hour Body (which is where I got this recipe from!) I just adore Tim Ferriss and his body shaping techniques but sorry Tim, I just had to make some adjustments to that dang muffin recipe!

Jennifer’s Breakfast in a cup recipe:

I found that my recipe version is a bit fluffier, sweeter and seems to make a really big muffin big enough for two to share!   Maybe I should call it the “Love Muffin”  giggle, giggle!

  • 2 tsp Cinnamon
  • 1/4 cup ground flaxseed (another one I tend to purchase on Amazon)
  • 1 tsp baking powder
  • 1 tablespoon applesauce
  • 1 egg
  • 1 tablespoon of Splenda (sugar substitute) What can I say, I like it sweet!
The instructions were the same as above EXCEPT, I did have to microwave my version for about 90 seconds!  Then I drizzled it with honey and devoured it!!!  YUMMY!!!
